Crock Pot Turkey meatball and Tortellini Soup

So we FINALLY had some decent snow here in SLC and I wanted to make a soup. I didn't want to make a typical every day soups so I wanted to try this Meatball Tortellini soup. It sounded yummy and super easy! I had most of the stuff on hand. I have to say that it was a pretty good recipe. My little guy loved it, so thats always a plus! 

Crock Pot Turkey meatball and Tortellini soup

Ingredients:

1/2 bag frozen Meatballs (turkey, or italian)
1 bag frozen Cheese Tortellini
3 cans Beef Broth
1 Can Cannellini Beans
1 can Diced Tomatoes in italian blend
1/2 Onion, diced
2-3 cloves Garlic, minced
2 stalks Celery, cut into small pieces
1/2 tbsp Italian Seasoning
Salt & Pepper to taste
grated Parmesan Cheese

Add the meatballs, beans (undrained) and tomatoes (undrained) to the crock pot. Then add the onion, celery, garlic, and seasonings. Lastly add the beef broth. Mix well. Cook on low for 6-8 hours.

30-40 minutes before serving add the tortellini.

And BAM your done!

Olive Garden Tuscano Soup!

You will thank me once you've made this! It's absolutely DELICIOUS! I found the Recipe at Tasty Kitchen but tweaked it just a little the second time I made it and it turned out even BETTER! It's definitely filling and great for winter time. It's so quick and easy it takes about 30 minutes!

Ingredients:

  • 1 lb Mild Breakfast Sausage
  • 4 slices of Bacon (diced)
  • 3 cloves of Garlic (minced)
  • 3 whole medium Potatoes (sliced into decent size)
  • 1 quart warm water
  • 2 cubes Chicken Bouillon 
  • 1/4 bunch Kale (roughly chopped) I use a little bit more!
  • 1/2 cup Heavy Cream ( 1/2 and 1/2 would work too)
  • Salt and pepper to taste
Okay lets begin!

Crumble the breakfast sausage into your pot and cook on medium heat until its done. Drain it and set it aside.


In the same pot add your chopped bacon and and cook until they are almost done. Reduce the heat and add the garlic for about 1 minute.

Take your 1 quart of WARM water and add your Chicken Bouillon cubes to it and stir until they dissolve. Add your cut potatoes to the pot and pour the water mixture into the pot as well. Simmer for 15-20 minutes until potatoes are almost done.


Add the Kale, Sausage and Heavy Cream and let simmer for 5 more minutes.



And guess what?? YOUR DONE!


Enjoy it with some warm bread sticks or garlic bread!
